Streusel
1/2 cup Original Bisquick® mix
1/3 cup packed brown sugar
2 tablespoons firm butter or margarine
Muffins
2 cups Original Bisquick® mix
1 1/2 teaspoons pumpkin pie spice
1/2 cup chopped walnuts
1/2 cup shredded carrots
1/2 cup raisins
2 tablespoons granulated sugar
2/3 cup milk
2 tablespoons vegetable oil
1 egg
Instructions

1. Heat oven to 375°F. In small bowl, mix 1/2 cup Bisquick mix and the brown sugar until well blended. Cut in butter, using fork or pastry blender, until mixture is crumbly; set aside.
2. In large bowl, stir 2 cups Bisquick mix, the pumpkin pie spice, walnuts, carrots, raisins and granulated sugar until blended. Stir in milk, oil and egg until blended. Pour into ungreased 8-inch square pan. Sprinkle with streusel.
3. Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool 30 minutes before serving. Serve warm.
High Altitude (3500-6500 ft): Use 2 eggs. Bake 38 to 43 minutes.
