Savory Broccoli
Corn Casserole

Heat oven to 375°F.
Melt butter in 3-quart saucepan until sizzling. Add stuffing
and poultry seasoning; toss to coat. Reserve 1/2 cup buttered
stuffing mix for topping. Add broccoli, corn, eggs, onion, salt
and pepper to stuffing in saucepan; mix well.
Spoon mixture into ungreased
2-quart casserole; sprinkle with reserved stuffing mix.
Bake uncovered for 40
to 45 minutes or until knife inserted 1-inch from edge of casserole
comes out clean. Let stand 5 minutes before serving.

Mashed Potatoes

Place potatoes in 4-quart
saucepan. Add water and salt. Cover; bring to a boil over high
heat (7 to 10 minutes.) Reduce heat to medium. Cook until potatoes
are fork tender (15 to 18 minutes). Drain. Keep warm.
Meanwhile, combine onions
and 1 cup broth in 10-inch nonstick skillet. Cook over medium
heat, stirring occasionally, until onions are softened and broth
is absorbed (15 to 18 minutes).
Increase heat to medium-high;
add 2 tablespoons light butter. Cook until onions are browned
(6 to 8 minutes).
Place hot potatoes in
large mixer bowl; mash slightly with fork. Beat at medium speed,
adding remaining light butter, 1 tablespoon at a time, and mixing
well after each addition. Add cooked onions, remaining broth,
light sour cream and pepper. Continue beating until well mixed.
DO NOT OVERBEAT. Serve immediately.

In a large skillet, heat the oil over
a medium flame. Add the celery and onions and cook, stirring
frequently until golden.
Stir in 1/4 cup of the water; reduce heat
to low, cover, and cook until vegetables are tender.
In a very large bowl, toss the veggies
with the oregano, bread, broth, pepper and the rest of the water.
Bake at 325 F. in a greased, covered casserole
for 30 minutes. (Usually added to the oven in the last 30 minutes
of the turkey's cooking time.)

Pierce potato skins with
a fork. Place in a circle on a paper towel and microwave on high
11 to 13 minutes, or until tender, turning over once. Wrap each
potato in aluminum foil and set aside.
In a large microwave-safe
dish, combine celery, carrots, and onion. Cover and microwave
on high 1 minute. Stir in lamb; cover and microwave on high 5
minutes, or until the meat is no longer pink, stirring once.
Drain. Stir in tomato sauce and Worcestershire sauce. Microwave,
covered, on high 2 minutes.
Slit the potatoes lengthwise,
pinching the ends to blossom open, and top with the lamb mixture.
Serve immediately.

Savory Venison

Brown chopped bacon in
a skillet over medium heat for about 10 minutes, or until crisp.
Divide the drippings,
placing in a baking dish; add chopped onion, sliced carrots,
chili powder, marjoram. and red pepper flakes. Cook for 5 minutes;
add the reserved bacon.
In the original skillet
with of the drippings, cook cubed venison over medium-high heat
until browned. Remove and set aside.
Add crushed Italian tomatoes,
chicken broth, red wine, and tomato paste. Bring to a simmer
and cook, uncovered, for 40 minutes; stirring occasionally. Do
not boil. Add drained kidney beans and baby lima beans. Heat
through.

Savory Venison

Combine 3 tablespoons
of the flour, 3/4 teaspoon of the salt and pepper in a shallow
dish. Coat meat with flour mixture. In a heavy stockpot, heat
1 tablespoon of the oil. Brown meat over medium heat, about 8
minutes. Remove from pot and set aside.
Heat remaining 1 tablespoon
oil in the pot. Add onion and sauté until lightly brown;
drain off excess grease.
Return venison to pot
and add potato, carrot, 1 cup of the beer, beef broth, tomato
paste, bay leaf and thyme. Bring mixture to a boil, reduce heat,
cover, and simmer for 1 hour or until meat is tender.
Preheat oven to 450°F
(230°C). Discard bay leaf.
Combine 1 1/4 cups of
the flour and remaining 1/4 teaspoon salt in a medium mixer bowl.
Cut in shortening until the pieces are the size of peas. Sprinkle
water over mixture and gently toss with a fork to make a dough.
Form dough into a ball,
divide into thirds, and roll out one portion into a round to
fit over the top of a casserole dish. On a lightly floured surface,
flatten remaining dough and roll out to fit inside the baking
dish.
Stir together remaining
1/4 cup beer and remaining 1 tablespoon flour. Add to meat mixture.
Cook, stirring, until thickened and bubbly.
Spoon meat mixture into
crust and top with round dough. Turn edges under and flute to
seal. Make several cuts in the top and bake for 15 to 20 minutes
or until the crust is browned.

Honey Buns Chinese-Style

Stir-fry pork and onion
until pork is browned and onion soft; add mushrooms and soy sauce.
Mix sugar and cornstarch;
stir into pork mixture. Cook until mushrooms are tender. Remove
from heat; add pistachios.
Cut bread dough into 56
pieces. Flatten into 2-inch rounds. Place 1 teaspoon filling
in center of each round, gather edges and seal. Place sealed-side
down on baking sheet.
Bake at 350°F 10 to
12 minutes or until golden brown. Brush with honey; sprinkle
with finely chopped pistachios.

Combine pretzels, honey graham cereal, cereal squares and mixed
nuts in ungreased 15 x 10 x 1-inch jelly roll pan.

stirring to coat.
Bake, stirring every 15
minutes, for 1 hour. Cool completely. Store in tightly covered
container.
