Dad's Grilled
Pork Chops with Savory Steak Butter

Season chops with pepper
to taste. Grill over medium-hot coals until just done, about

Savory Steak Butter: In
a small bowl, beat together butter, steak sauce, Worcestershire
sauce, seasoned salt, liquid smoke, garlic and hot pepper sauce.
Cover and refrigerate.

Savory Raspberry Tea Sauce

sugar, Nestea, lemon juice, cornstarch and mustard in a small
saucepan. Cook, whisking occasionally, until mixture comes to
a boil. Boil, whisking occasionally, until sauce is thickened.

Season pork chops and
saute in hot oil until golden on both sides; remove chops from
pan.
Pour off all oil. Add
vinegar, orange juice, lemon juice, brown sugar and ginger. Stir
to combine well. Add pork chops. Cover skillet and cook at a
bare simmer for 15 minutes.
Remove chops and keep
warm; boil liquid to reduce by half. Add mandarin oranges.
Spoon sauce over chops;
serve hot.

Pork Chops in Savory Grape-Mustard Sauce

In large heavy skillet
heat butter over medium-high heat. Cook pork chops for 8 to 10
minutes, turning once. Remove chops to a serving platter; keep
warm.
Add grapes, cream, parsley,
mustard, onion, garlic, salt and pepper to skillet. Cook over
high heat, stirring, until sauce thickens slight; spoon over
chops.

In a skillet, in 1 tablespoon
butter, cook boneless pork chops for 10 minutes, or until browned
on both sides. Remove and set aside.
Add the remaining 1 tablespoon
of butter and cook sliced mushrooms and rosemary, stirring often.
Add cream of mushroom
soup, water, and sliced green beans. Bring to a boil then return
the pork chops. Cover and cook over low heat for 10 minutes,
or until the pork chops are done and the green beans are tender.

Season pork chops with
salt, pepper and rosemary; set aside.
In a heated skillet, add
oil and over medium-high heat, brown pork chops until cooked
thoroughly, about 5 minutes per side.
Remove chops to a serving
platter and cover to keep warm. Add shallot to pan; sauté
until soft. Add broth, scraping to remove any browned bits from
bottom of pan. Let liquid reduce by half, about 3 minutes. Swirl
in butter until melted and pour over chops. Serve warm.

Heat oven to 425 degree
F.
Melt butter in large skillet.
Brown pork cubes over medium-high heat. Stir in chicken broth
and seasonings; simmer 10 minutes.
Stir in carrots and onions;
simmer 10 minutes.
Stir in peas.
In small bowl, combine
flour and half-and-half; beat until smooth. Gradually stir into
skillet; cook and stir until thickened.
Follow pie crust package
directions for 2-crust pie, filling with pork mixture.
Bake at 425 degrees F.
for 35 to 40 minutes or until golden brown.

Stir-Fry

Slice pork across grain
into 1/8-inch strips. Marinate in soy sauce, vinegar, sesame
oil, garlic and ginger for 10 minutes.
Heat vegetable oil in
nonstick pan until hot. Add pork and stir-fry for 3 to 5 minutes,
until pork is no longer pink.
Add vegetables (unthawed)
and the chicken broth or water. Stir mixture, cover and steam
for crisp-tender vegetables.
Serve over hot cooked
rice, if desired. Sprinkle with toasted sesame seeds, if desired.

Citrus Broiled
Alaska Salmon With Savory Herbed Rice and Greens

Preheat broiler.
Cut salmon fillets into
4 equal portions; season to taste with salt. Peel and remove
pith from oranges; slice crosswise into ¼-inch rounds.
Broil fillets, 4 to 6
inches from heat, allowing 10 minutes per inch of thickness,
measured at the thickest part. Remove fillets just before they
are cooked through. Sprinkle with vinegar. Arrange orange rounds
on top, and sprinkle with green onions and cracked pepper. Broil
1 minute longer.
Meanwhile, prepare herbed
rice according to package directions, replacing ¼ cup
of water with the wine. Serve with mixed greens sprinkled with
seasoned rice vinegar, if desired.

Shrimp

Mix oil, garlic, lemon
juice, pepper and parsley together in flat pan. Marinate shrimp
in oil mixture.
Prepare grill.
Cut excess fat off ends
of bacon slices. Wrap a slice of bacon around each shrimp and
fasten with a wooden pick.
Grill shrimp on medium
heat for 5 minutes, turning and basting once. Shrimp are done
when opaque throughout. Do not over cook. Discard bacon, if desired.
