Cheese Tortellini
in Savory Broth

Savory Eggs
on Tortillas

Heat oil in omelet pan
or skillet over medium heat, cook leek and red pepper until vegetables
are tender but not browned. In medium bowl, beat together eggs,
milk and 2 tablespoons cheese until well blended. Pour into skillet
over leek. As mixture begins to set, gently draw an inverted
pancake turner completely across bottom and sides of pan, forming
large soft curds. Continue until eggs are thickened and no visible
liquid egg remains. Do not stir constantly.
For each serving, top
one warmed tortilla with 1/4 of the cooked eggs. Fold tortilla
in half, then half again. Top with salsa, if desired. Sprinkle
with additional Parmesan cheese, if desired. Garnish with orange,
avocado and pepper, if desired.

Savory Apricot

In a blender or food processor
combine apricots in syrup, brown sugar, cornstarch, lemon juice,
prepared brown mustard, Worcestershire sauce, and garlic clove.
Process until smooth. Pour the mixture into a saucepan and stir
in chopped dried apricots. Cook, stirring, until thickened, about
2 minutes.
Remove from the heat and
stir in butter.

Add flour and herbs; cook and stir until
mixture bubbles and thickens. Gradually add wine and water; stir
in blueberries. Cook and stir until mixture thickens and boils;
simmer 2 minutes.

and all remaining ingredients except cornstarch. Cover and simmer
gently 10 minutes.
Combine cornstarch and remaining water;
stir into cherry mixture. Cook and stir until mixture thickens;
simmer 1 minute.

Savory Stuffed
Veal Roast

Cook diced strips of bacon
in a skillet until soft. Add sliced onion and cook for 5 minutes.
Chop canned mushrooms, add to the skillet and cook for another
5 minutes. Remove the mixture from the heat, cool, then transfer
to a mixing bowl. Add chopped parsley, dillweed, tarragon, basil,
ground beef, dry bread crumbs, eggs, and sour cream. Mix thoroughly,
then season with 1/2 teaspoon salt and 1/4 teaspoon pepper.
With a sharp knife, cut
a pocket in veal breast. Fill with the stuffing and close with
toothpicks. Rub the outside with 1/2 teaspoon salt and 1/4 teaspoon
pepper. Grease a baking dish with oil. Add the veal and bake
at 350*F. for about 1 1/2 hours. Baste occasionally with beef
broth.
Remove the veal from the
baking dish and bring the drippings to a simmer. Thoroughly blend
cornstarch with sour cream and add to the pan juices; cook, stirring
occasionally till thick and bubbly. Serve over the sliced veal.

Combine flour, salt and
pepper. Lightly coat veal with flour mixture. Heat oil in Dutch
oven over medium heat until hot. Brown veal, 1/2 at a time; remove
from Dutch oven.
Add onion and garlic to
Dutch oven; cook and stir 1 minute. Add veal, broth and thyme;
bring to a boil. Reduce heat; cover tightly and simmer 45 minutes.
Add carrots and potatoes;
continue cooking, covered, 30 minutes or until veal and vegetables
are fork-tender. Skim fat. Stir in peas; heat through.

Potato Chowder

(5 to 10 minutes).

over medium heat. Add onion and celery; cook for 3 to 5 minutes
or until tender. Stir in flour; cook, stirring constantly, for
1 minute.
Stir in water, crab, chicken
base, wine, ketchup and pepper; bring to a boil. Reduce heat
to low. Cook, stirring occasionally, for 5 minutes. Stir in half-and-half;
heat through.

Brown chopped bacon in
a skillet over medium heat for about 10 minutes, or until crisp.
Divide the drippings,
placing in a baking dish; add chopped onion, sliced carrots,
chili powder, marjoram. and red pepper flakes. Cook for 5 minutes;
add the reserved bacon.
In the original skillet
with of the drippings, cook diced venison over medium-high heat
until browned. Remove and set aside.
Add crushed Italian tomatoes,
chicken broth, red wine, and tomato paste. Bring to a simmer
and cook, uncovered, for 40 minutes; stirring occasionally. Do
not boil. Add drained kidney beans and baby lima beans. Heat
through.
