South of the Border Sandwich

Ingridients 1 Pita bread
1 Seasoned Beef filling (Que
-Bueno Enchilada Sauce label
-recipe; heated (#10 scoop)
1 oz Lettuce; shredded
1 oz Tomato; chopped
1 oz Chef-Mate Monterey Jack and
-Cheddar Cheese Sauce;heated
1 tb Green onions; chopped

| 1. Separate bread around edges to form pocket and place #10 scoop
beef filling inside. Spread to form even layer. 2. Place shredded
lettuce and chopped tomato inside pita. 3. Ladle cheese sauce over
filling. 4. Garnish with chopped green onions and serve.

Makes 1 sandwich


Pea-Cheddar Sandwich Spread

Ingridients 1/2 c Dry Split Peas
2 c Water
2 c Cheddar Cheese ,grated
1/2 Onion, chopped finely
Salt to taste
Pepper to taste
|Cook peas in water until tender. In a blender place cooked
peas,cheese, onion, salt and pepper. Blend until smooth. Spread on
sanwiches, serve warm.


Egg and Watercress Finger Sandwiches

Ingridients 6 Eggs, hard-boiled & chopped
1/4 c Mayonnaise
1 tb Honey Dijon Mustard
1/4 ts Celery Seed
Salt and Pepper
6 tb Unsalted Butter, softened
16 oz Loaf Whole Wheat Bread,
Sliced lengthwise with
Crusts removed (6 slices)
Fresh Watercress Sprigs|In a small bowl, combine chopped eggs, mayonnaise, mustard, celery
seed, and salt and pepper to taste. Mix well and set aside. Lightly
butter bread. Spread half the bread slices with egg mixture, then top
with watercress. Top with remaining bread slices, buttered side down.
Press gently to seal. Wrap and refrigerate at least 1 hour. Cut
sandwiches crosswise into 1" fingers.


Dagwood Bumstead Sandwich

1 Head lettuce
4 Tomatoes, sliced
1 Lobster tail
1 Eagle talon
1 Fish (pref.2-days old)
1 Pot spaghetti
- Cold and gooey
1 lb Bacon (cooked?)
1 Meatloaf
1 Ham
1 Fried egg (over easy)
1 String of sausages
1 Mayonnaise, gallon
1 Jar of pickle relish
1 Tin of sardine in oil
1 Bottle of ketchup
1 Bottle Sweet mustard
1 Hot mustard
1 Loaf Bread
Assorted cheese
Assorted vegetables
Assorted olives
| Now that he has announced joining his wifes catering business, cartoon chowhound Dagwood Bumstead is releasing the recipe
for his famous Dagwood sandwich. See ingredients above. See
directions below.

DIRECTIONS: Arrange the ingredients between two slices of bread.
Serves one.


Italian Sausage

Ingridients 6 pounds meat (5 pork, 1 beef)
4 teaspoons of salt
1/2 oz fennel seed (or to taste)
1/2 oz crushed red pepper (or to taste)
1 Tablespoon Paprika
1/2 cup water|Remove the pork from the bone and cut into 1 inch cubes.
Cut beef into cubes. Toss meat with seasonings and 1/2 cup
water. Store in refrigerator over night and grind the next day.
Grind the meat twice with a course blade and make it into large
patties (1/2 cup measure of sausage), freeze them between
double layer sheets of wax paper on a cookie sheet and then
put them in plastic bags.
Make hot sausage sandwiches with fried onions and green
peppers on a hoagie bun. Grill sausage either in a frying pan,
or barbecue.


Ice Cream Sandwiches

Ingridients 1/2 cup butter
1/2 cup semi−sweet chocolate chips
1/3 cup sugar
1 egg
1 tsp. vanilla
3/4 cup flour
2 tbls. cocoa powder
1/2 tsp. baking powder
3 cups vanilla ice cream, slightly softened|Preheat oven to 325 degrees. Line 10x15 cookie sheet with wax paper
& lightly oil paper. Melt butter and choc. chips, stir and allow to cool.
Beat together sugar & egg till pale & creamy. Beat in melted choc. and
vanilla. Add flour, cocoa, and baking powder. Continue beating until
incorporated. Transfer batter to pan and spread evenly to edges.
Bake 15 min., then remove from oven. Cool 10 min. and invert onto
cutting board. Carefully remove wax paper and, using sharp unserrated
knife, cut in half lengthwise. When completely cool, spread ice−cream
over one half of the chocolate biscuit evenly. Top with second wafer.
Wrap in plastic wrap and freeze for at least 4 hr. Cut into 8 slices.


Maid Rite Sandwiches

Ingridients 1−1/2 pounds ground beef
2 teaspoons granulated sugar
3−4 teaspoons prepared mustard
4 Tablespoons beer
To Taste:
red pepper
black pepper
garlic salt
salt|Brown & drain the hamburger. Stir in the other ingredients and simmer.
Spices are added "to taste."
The Maid Rite serves their sandwiches with a choice of cheese, mustard and
chopped fresh onion.


Devonshire Sandwiches

Ingridients 18 sl Bacon
1/2 c Flour, all-purpose
2 c Milk
1/2 lb Cheese, Cheddar; shredded
1 ts Mustard, dry
6 sl Bread
12 sl Chicken breast; thin slices
1/4 c Cheese, Parmesan; grated
|Cook bacon; drain, reserving 1/4 cup drippings. Combine flour and
reserved drippings over low heat, blending unitl smooth. Gradually
add milk; cook until smooth and thickened, stirring constantly. Add
Cheddar cheese and dry mustard, stirring until cheese melts.

Place 3 slices bacon on each slice of bread, and top with 2 slices of
chicken. Place in a 13x9x2" baking pan; cover with cheese sauce, and
sprinkle with Parmesan cheese. Bake at 350 degrees for 10 minutes or
until bubbly.


New Yorker Pita Sandwich

Ingridients 3/4 lb Boneless skinless chicken
-breasts, cut into 1/4"
-strips
1/2 c Chopped onion
1/2 c Green bell pepper strips
1 T Vegetable oil
1 cn HEINZ Vegetarian Beans in
-Tomato Sauce
2 T HEINZ Horseradish Sauce
1/4 t Salt
ds Black pepper
4 Pocket pita breads (5" dia)
8 sl Tomato
Leaf lettuce
|In skillet, saute chicken, onion and green pepper in oil until
vegetables are tender-crisp and chicken is tender. Stir in beans,
horseradish sauce, salt and pepper. Simmer 5 minutes to blend
flavors. Cut pitas in half and tuck 1 tomato slice and lettuce into
each half. Fill each with about 1/3 cup bean mixture.


Chick−Fil−A Chicken Salad

Ingridients 2 Cups Cooked Chicken Breast
1/3 Cup Finely Diced Celery
1 hard boiled egg, minced
1/4 teaspoon Salt
1/2 teaspoon Sugar
1/4 teaspoon Freshly Ground Pepper
1/3 Cup Sweet Pickle Relish
2/3 − 1 Cup Mayonnaise
Texas Toast or Thick Cut Sandwich Bread|Boil chicken until completely cooked. Remove from water and cool meat.
You can save the chicken broth, seal and refrigerate no more than a week.
After chicken is cool, cut into tiny pieces. Place in a mixing bowl with
all other ingredients and mix well. Butter one side of sandwich bread and
grill. Place salad in between grilled bread slices and serve.
