Cappuccino
Snack Cake

1 cup all-purpose flour
1/2 cup granulated sugar
1/2 cup water
1/4 cup LAND O LAKES® Butter, softened
2 (1.16-ounce) packets LAND O LAKES® Cappuccino Classics
2 large eggs
1/2 teaspoon baking powder
1/2 teaspoon baking soda
Frosting Ingredients:
1 (1.16-ounce) packet
LAND O LAKES® Cappuccino Classics
2 tablespoons milk
1/4 cup LAND O LAKES® Butter, softened
1 1/2 cups powdered sugar
1/2 teaspoon vanilla extract

Heat oven to 350°F.
Combine all cake ingredients
in large mixer bowl. Beat at medium speed, scraping bowl often,
until smooth (2 to 3 minutes).
Pour batter into greased
and floured 8-inch square baking pan. Bake for 30 to 40 minutes
or until toothpick inserted in center comes out clean. Cool completely.
Dissolve 1 packet cappuccino
mix in milk in small bowl; mix well.
Place 1/4 cup butter in
medium mixer bowl. Beat at medium speed, scraping bowl often,
until creamy (1 to 2 minutes). Reduce speed to low. Beat, gradually
adding cappuccino mixture, powdered sugar and vanilla and scraping
bowl often, until well mixed (1 to 2 minutes). Beat in additional
milk, 1 teaspoon at a time, if necessary for desired spreading
consistency. Frost cooled cake.

Chip Banana Snack Cake

Heat oven to 350°F.
Stir together flour, baking
powder, baking soda and salt in medium bowl; set aside.
Combine sugar and butter
in large mixer bowl. Beat at medium speed, scraping bowl often,
until creamy (2 to 3 minutes). Continue beating, adding eggs
one at a time, until well mixed (1 to 2 minutes). Add sour cream,
bananas and vanilla; continue beating until well mixed (1 minute).
Reduce speed to low. Continue
beating, gradually adding flour mixture and scraping bowl often,
until well mixed (1 minute). Gently stir in 1 cup chocolate chips
by hand.
Pour batter into greased
13 x 9-inch baking pan. Sprinkle remaining chocolate chips over
batter. Bake for 40 to 45 minutes or until toothpick inserted
in center comes out clean.

Strawberry-Topped
Sour Cream Snack Cake

Butter, softened*
1 cup granulated sugar
3 large egg whites
1/4 cup LAND O LAKES® Sour Cream
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/3 cup milk
Topping Ingredients:
1 (10-ounce) package frozen
sliced sweetened strawberries, thawed
1 tablespoon cornstarch
Whipped cream, if desired

Heat oven to 350°F.
Combine butter and sugar
in large mixer bowl. Beat at medium speed, scraping bowl often,
until creamy. Add egg whites; continue beating until light and
fluffy. Stir in sour cream and vanilla. Add flour, baking powder,
salt and milk. Reduce speed to low; beat just until combined.
Spread batter into greased
and floured 8-inch square baking pan. Bake for 30 to 35 minutes
or until toothpick inserted in center comes out clean. Cool completely.
Meanwhile, combine strawberries
and cornstarch in 1-quart saucepan. Cook over medium heat, stirring
occasionally, until mixture boils and thickens (4 to 5 minutes).
Cool 15 minutes.
Spoon strawberry mixture
onto cake, spreading evenly. Cover; refrigerate until chilled
(at least 2 hours). Serve with whipped cream, if desired.

Barbecue
Chicken and Cheddar Snackwiches

Preheat a covered grill
(e.g. George Foreman) or non-stick skillet for five minutes.
Spray with non-stick cooking spray.
Combine mayonnaise and
grated Parmesan in small bowl.
Arrange bread slices on
cutting board and spread approximately one tablespoon of Parmesan-mayo
mixture on four of the bread slices. Top each with several slices
of chicken, onion, 1/2 Cheddar cheese and one bacon slice. Spread
remaining slices of bread with 1 1/2 tablespoons of barbecue
sauce. Assemble sandwiches.
Cook sandwiches two at
a time in covered grill, about six minutes or until bread is
golden and cheese is melted. Remove from grill and cut into quarters.
Serve with a side of additional
barbecue sauce if desired.

Apple Raisin Snack Bars

Preheat oven to 350*F (175*C). Grease
a 13 x 9 x 2-inch baking pan; set aside.
In large mixing bowl, combine oats, flour
and sugars; cut in butter until mixture resembles coarse crumbs.
Reserve 1 cup oat mixture.
Press remaining oat mixture onto bottom
of prepared pan.
Bake for 15 minutes.
In large mixing bowl, combine cream cheese
and eggs, mixing until well blended. pour over baked crust.
Top with remaining ingredients; sprinkle
with reserved oat mixture.
Bake for 25 minutes. Cool in pan on wire
rack. Cut into bars.

Snack Bars II

Preheat oven to 325*F.
Mix 1 cup flour, softened
butter, and powdered sugar until smooth. Spread over the bottom
of an 8-inch square pan. Bake for 20 to 25 minutes.
Mix together eggs, sugar,
blueberries, coconut, remaining 1/4 cup flour, lemon juice, vanilla,
baking powder, cinnamon, and salt. Spread over the top of the
cookie base. Bake for another 30 minutes; cool.

Combine flour and powdered sugar, mix
in butter until well blended. Press into a 13 x 9 x 2-inch baking
pan. Bake for 8 to 10 minutes or until golden brown.
Mix together remaining ingredients and
pour over baked crust. Bake an additional 30 minutes. Cool completely
and cut into bars.

sugar until fluffy. Add eggs; beat well.
Stir in mincemeat, chopped pecans, melted
chocolate and salt; mix well. Stir in flour. Spread evenly into
prepared baking pan.
Bake for 30 minutes or until wooden pick
inserted in center comes out clean. Cool in pan on wire rack.
Sprinkle with powdered sugar. Cut into
bars. Garnish with pecan halves, if desired.

Heat oven to 350°F.
Grease 13 x 9 x 2-inch baking pan.
Beat butter and sugar
in large bowl. Add syrup, eggs and flour; beat well.
Stir in chocolate chips.
Pour batter into prepared pan.
Bake 30 to 35 minutes
or until brownies begin to pull away from sides of pan. Cool
completely in pan on wire rack. Cut into bars.

Super Chocolate
Snack Bars

Heat oven to 350°F.
Grease bottom and sides of 13 x 9 x 2-inch baking pan.
Stir together crumbs,
1/2 cup cocoa and sugar; cut in 3/4 cup butter with pastry blender
or 2 knives until mixture is crumbly.
Press evenly on bottom
and 1/2-inch up sides of prepared pan. Sprinkle marshmallows
and coconut over chocolate layer.
Combine sweetened
condensed milk, remaining 1/2 cup cocoa and remaining 1/4 cup
butter in microwave-safe bowl. Microwave at HIGH (100%) 1 to
1 1/2 minutes or until mixture is smooth when stirred; evenly
pour over coconut.
Sprinkle evenly with nuts
and pretzel pieces; press down firmly.
Bake 25 to 30 minutes
or just until bubbly on top. Cool completely; cut into bars.
Store leftover bars tightly covered at room temperature.
