Pizza Fondue

For dipping: Breadsticks
and cubes of crusty French or Italian bread
Cook beef and garlic in
large saucepan over medium heat until no longer pink. Drain off
fat. Stir in pizza sauce and spices. Cook over medium heat until
hot, but not boiling.
Combine cheese and stir
into meat mixture until melted. Transfer into large serving dish
and serve immediately with bread.

Wine-Tarragon Fondue

Cut chicken into bite-size pieces. Cover
and chill up to 4 hours. In a medium saucepan cook carrots in
a small amount of boiling salted water for 5 minutes. Add cauliflower;
cook for 2 minutes more. Drain, cover, and chill.
To serve, prepare dipping sauce; set aside.
On a serving platter arrange chicken, carrots, cauliflower, and
zucchini.
In a fondue pot combine wine, broth, green
onion, and tarragon. Bring to a gentle boil. Spear pieces of
chicken and vegetables with fondue forks; dip into bubbling broth.
Cook vegetables for 1 to 2 minutes and chicken for 2 to 3 minutes
or until no longer pink. (To maintain the temperature, don't
add too many pieces of food to the broth at one time.) Dip cooked
chicken and vegetables into sauce.

Fondue Cheese
and Mushroom Frittata

Combine eggs, cheese,
water, salt, and pepper. Heat margarine or butter in a 10-inch
nonstick skillet until melted. Add mushrooms; cook over medium-high
heat 4 to 5 minutes or until liquid evaporates. Add green onion,
parsley, and dillweed. Reduce heat.
Pour egg mixture over
mushroom mixture. Cook, uncovered, over medium heat. As the egg
mixture begins to set, run a spatula around edge of skillet,
lifting mixture so uncooked portion flows underneath. Continue
until almost set. Remove from heat. Cover; let stand 3 to 4 minutes
or until top is set. Cut into wedges.

Chocolate Fondue (Diabetic)

Cut squares of chocolate into pieces;
heat chocolate and milk in medium saucepan over medium-low to
low heat, whisking constantly, until chocolate is almost melted.
Remove from heat; continue whisking until
chocolate is melted and mixture is shiny. Add Equal® and
vanilla or rum extract, whisking until mixture is smooth.
Pour chocolate mixture into fondue pot
or serving bowl; serve with fruit and pretzels for dipping.
