Cherry Crunch

Preheat oven to 375*F.
Brush the bottom and sides
of a graham cracker pie crust with a slightly beaten egg yolk.
Place pie pan on a baking sheet in the oven for about 5 minutes,
or until light brown. Remove from the oven.
In a small bowl, combine
cornstarch and water; stirring until smooth. Add cherry pie filling
and combine. Spoon into the pie crust.
In another bowl, combine
sugar, brown sugar, flour, quick cooking oats (uncooked), and
melted butter. Mix well and spoon over the cherry filling.
Bake for 30 minutes on
a baking sheet. Cool.

PREHEAT oven to 400°F
(205°C).
COMBINE Macaroni and Cheese,
tuna and peas in medium bowl. Transfer to 8-inch-square baking
pan; top with chips and paprika.
BAKE for 25 to 30 minutes
or until bubbly around edges.

Crunchy Walnut-Crusted Salmon

In food processor, process walnuts, breadcrumbs,
lemon rind, oil, dill and salt and pepper to taste, using pulsing
action until crumbly, mixture should slightly stick together;
set aside.
Place salmon fillets, skin side down,
and brush tops with mustard. Divide crust mixture evenly among
fillets; press onto mustard. Cover with plastic wrap and refrigerate
at least 15 minutes or up to 2 hours.
Place salmon fillets on baking pan.
Bake at 350°F about 15 minutes or
until salmon flakes with fork. Drizzle with a little lemon juice.

Crunchy Catfish
Fillets with Lemon-Parsley Sauce

Preheat oven to 350*IF.
In a shallow or flat bowl
combine 2 eggs and 2 tablespoons water; beat well and set aside.
In another shallow or
flat bowl, combine 1/2 cup crushed crackers, 1/3 cup grated parmesan
cheese, 1 tablespoon Italian seasoning; set aside.
Dip 2 pounds catfish in
the egg mixture, then in the seasoned cracker crumbs, coating
well.
Transfer to a greased
baking dish and drizzle 2 tablespoons melted butter on top.
Bake for 30 minutes.
Meanwhile, in a saucepan,
combine 3 chopped green onions, 2 tablespoons lemon juice, 1/2
cup melted butter, 1 tablespoon parsley, 1/2 teaspoon salt, 1/4
teaspoon pepper, 2 teaspoons worcestershire sauce, and 1/8 teaspoon
liquid hot pepper sauce.
Simmer for 3 minutes then
pour over the cooked catfish.

Crunchy Fish
& Spuds

Heat oven to 350°F.
Melt butter in 13x9-inch baking pan in oven (5 to 7 minutes).
Add potato slices to prepared
pan; stir to coat. Cover with aluminum foil. Bake for 20 to 25
minutes or until potato slices are fork tender.
Meanwhile, stir together
all remaining ingredients except fish fillets in 9-inch pie pan.
Spoon potatoes to one side of baking pan. Dip fish into melted
butter that potatoes were baked in, then coat with crumb mixture.
Place fish to one side in same baking pan with potatoes. Sprinkle
fish and potatoes with remaining crumb mixture. Bake for 20 to
30 minutes or until fish flakes with a fork.

& Cherry Crunch

Melt butter in 10-inch
skillet; add cumin and red pepper. Stir in cashews and corn nuts.
Cook over medium heat, stirring constantly, until lightly browned
(1 to 2 minutes). Remove from heat.
Place cashew mixture and
cherries in medium bowl; toss lightly to coat. Store in tightly
covered container.

Heat oven to 375°F.
Spray 13 x 9-inch baking pan with no stick cooking spray. Combine
cereals, pretzels and nuts in prepared pan. Set aside.
Combine brown sugar, butter
and corn syrup in 2-quart heavy saucepan. Cook over medium heat,
stirring occasionally, until mixture comes to a full boil (4
to 6 minutes). Remove from heat. Stir in vanilla and baking soda.
Pour over cereal mixture in prepared pan; toss to coat.
Bake for 10 to 15 minutes,
stirring every 5 minutes, or until coating is set. Remove from
oven. Stir.
Spoon cereal mixture onto
aluminum foil or large ungreased baking sheet. Cool 10 minutes.
Break into pieces. Store in tightly covered container.

forms. Stir in cereal until combined.
Shape dough into 1-inch
balls. Place 2-inches apart onto ungreased baking sheet. Bake
for 10 to 15 minutes or until golden brown.

Ballpark Popcorn Crunch

Cream together butter and brown sugar
until light and fluffy.
In a separate bowl, toss popcorn and peanuts.
Add creamed mixture to popcorn and nuts. Combine until coated.
Spread on a large baking sheet in a single layer.
Bake in a 350*F (175*C) oven for 10 minutes
or until crisp.

Crunchy Caramel Corn

Heat oven to 250°F.
Place popcorn in large roasting pan; set aside.
Combine brown sugar, margarine,
corn syrup, salt and molasses in 2-quart saucepan. Cook over
medium heat, stirring occasionally, until mixture comes to a
full boil (8 to 12 minutes). Continue cooking, stirring occasionally,
until candy thermometer reaches 238°F. or small amount of
mixture dropped into ice water forms a soft ball (2 to 6 minutes).
Remove from heat; stir in baking soda and vanilla.
Pour over popcorn; sprinkle
peanuts over caramel mixture. Stir until all popcorn is coated.
Bake for 20 minutes; stir. Continue baking for 25 minutes. Remove
from oven. Immediately place caramel corn on waxed paper; cool
completely. Break into pieces. Store in tightly covered container.
