Preheat oven to 375 degrees
Fahrenheit. Set up three bowls with the following: 1) flour mixed
with a pinch of salt and pepper; 2) an egg-wash; made by beating
the eggs and milk together; 3) cornflakes mixed with cheese.
Coat a 13 x 9-inch baking
pan with non-stick cooking spray. Dip chicken pieces in flour,
then into the egg-wash, then roll in the cheesy-flakes mixture,
coating the entire piece of chicken and place on the baking pan.
Discard any unused cornflake mixture after coating chicken. Bake
for 25 minutes, turning halfway through to ensure even browning.
Serve with ketchup or BBQ sauce if desired.

Turkey Bites

Mix the garlic, ginger,
lemon juice and soy sauce in a large, sturdy, sealable plastic
bag. Slice the turkey meat into 1-inch slices. Place the turkey
in the marinade and refrigerate over night.
Melt the apricot preserves
in a small saucepan until smooth.
In a small serving bowl,
mix the mustard and hot water until smooth. Blend the apricots
and lemon juice into the mustard mixture and garnish, if desired.
Set aside to cool.
Mix the ground almonds
and sesame seeds.
Heat about 2-inches of
the oil over medium heat in a large skillet to about 350°F.
Dip the turkey pieces
into the almond-sesame mixture and deep fry several at a time
until golden brown on each side, about one minute. If they brown
too fast, remove the skillet from the heat for a few minutes
and reduce the heat. Drain the turkey thoroughly on paper towels
before serving hot with the dip.

stir in seasoning mix. Add cereal; stir to coat evenly. Bake,
stirring after half the time, for 10 to 12 minutes or until cereal
is crisp.

Spray 13 x 9-inch baking pan with no stick cooking spray; place
cereal in pan.
Combine brown sugar, butter
and syrup in 2-quart saucepan. Cook over medium-high heat until
mixture comes to a boil (2 to 3 minutes). Continue cooking, stirring
constantly (1 minute). Remove from heat. Add baking soda; mix
well.
Pour syrup mixture over
cereal; stir gently until well coated. Bake for 20 minutes; stir.
Continue baking for 20 minutes. Stir in peanuts and/or candy.
Spread mixture onto waxed
paper; cool 30 minutes. Break cooled mixture into pieces. Store
in loosely covered container.

Bake 1 hour, stirring
every 15 minutes. Remove from oven; stir in caramel corn.
Transfer to baking sheet,
spreading mixture in even layer.
Cool completely. Store

to 1 minute 30 seconds or until boiling.
Stir vanilla and baking
soda into sugar mixture. Pour over cereal mixture; stir to coat
evenly.
Bake 1 hour, stirring
every 15 minutes. Transfer to baking sheet, spreading mixture
in even layer. Cool completely; break into pieces.

Place the sweet potatoes
in a large bowl. Add margarine, brown sugar, pecans, vanilla,
flour, and cinnamon; mix well. Beat in the egg.
Form the mixture into
bite size balls and roll in crushed corn flakes. Place the sweet
potato balls on the baking sheet coated with nonstick cooking
spray.
Bake for about 20 minutes.
Serve with toothpicks.
