Tomato Bruschetta

1 Loaf Italian bread, halved lengthwise then cut crosswise diagonally, into 1−in slices 1 Garlic clove; minced 2 Tablespoon Olive oil 2 Large Tomatoes; peeled, seeded, and chopped 1/4 Teaspoon Salt 1/4 Teaspoon Pepper 1/2 Cup Chopped fresh basil|Toast the bread under the broiler until lightly browned. Combine the garlic and olive oil and brush over one side of the bread. Spread the tomatoes over the bread. Sprinkle with salt and pepper. Broil for about 30 seconds to heat the tomatoes. Sprinkle with basil and serve. |
Tuscan Tuna
and White Bean Bruschetta

In small bowl, flake tuna
with fork. Stir in remaining ingredients. Set aside.
With food processor running,
drop garlic through feed tube and process until chopped. Add
beans; process until smooth. Add tomatoes, salt and pepper; pulse
just to mix. Scrape into small bowl.
Heat broiler. Arrange
bread slices in single layer on cookie sheets. Broil 1 to 3 minutes,
or until lightly toasted.
Spread each toast with
bean purée, then spoon on some tuna mixture.

and Tomato Bruschetta

In medium bowl, stir together
all topping ingredients; set aside.
Brush olive oil on both
sides of bread slices; place on baking sheet.
Bake at 400 degrees F.,
turning once, for 7 minutes per side or until crisp and golden
brown; cool.
Spoon about 1 tablespoon
topping on each toast round.*

in bowl. Mix in enough mayonnaise to form a thick spread.
Preheat broiler.
Top bread rounds with

Bruschetta
with Capers and Olives

Combine tomatoes and reserved
juice, olives, oil, tomato paste, vinegar, garlic, capers, salt
and crushed red pepper in medium bowl. Cover; refrigerate for
at least 3 hours. SERVE tomato mixture on toasted baguette slices.

Blue Cheese and Pear Bruschetta

Rinse the pears but don't peel them. Cut
them into small dice and place in a small bowl. Sprinkle pears
with lemon juice and toss. Add the parsley, blue cheese, and
oil and toss gently and thoroughly. Season to taste with freshly
ground black pepper. Set aside. (The topping can be prepared
up to this point up a few hours ahead. Store, covered, in the
refrigerator.)
Preheat the broiler. Arrange bread slices
in a single layer on a baking sheet and toast under the broiler
until lightly browned and crisp, 1 to 2 minutes per side.
Spread each toast round with a teaspoon
of mascarpone. Top with a generous tablespoon of the diced pear
mixture, mounding it up high and pressing it firmly. Finish each
one with a sprinkling of walnuts and serve.

Cranberry
Bruschetta

Combine cranberries, sugar
and red wine vinegar in a medium saucepan. Bring to a boil. Add
onion and garlic, return to a boil and reduce heat. Simmer on
low for 10 minutes or until cranberries pop.
Pour into a glass bowl.
Stir in basil and oregano. Cool at room temperature.
Cut bread diagonally into
16 (3/4-inch) slices; brush both sides with oil. Broil each side
for 1 to 2 minutes or until golden brown. Top each slice with
cranberry mixture.

Easy Bruschetta

Preheat oven to 375°
F.
Toss together cheese,
garlic, tomato, basil, salt and pepper.
Spread mixture on top
of bread. Place on baking sheet and bake at 375° F for 8
to 10 minutes or until cheese in melted. Cut into slices and
serve immediately.

Basil and Caper Bruschetta

Combine tomatoes, basil,
capers and oil in medium bowl; toss gently.
Preheat broiler. Place
bread slices on baking sheet. Lightly toast both sides of bread
in broiler until light golden. Rub one side of each toasted bread
slice with cut side of garlic.
Spoon about 1/4 cup tomato
mixture over bread slice; sprinkle with cheese. Broil for additional
30 seconds or until cheese is melted.

Heat oven to 425°F.
Press dough onto bottom of greased 12-inch round pizza pan; sprinkle
with cheese.
Top with all remaining
ingredients except salsa. Bake for 15 to 25 minutes or until
crust is golden brown and cheese is melted.
To serve, cut into wedges.
Serve with salsa.
